Bang Up Banana Nut Muffins
Ingredients:
1 1/2 Cups all-purpose flour
1/4 teaspoon salt
1/2 teaspoon nutmeg
1/2 teaspoon ground cinnamon
1/2 Cup (1 stick) butter
1/2 Cup sugar
1 egg
1 teaspoon baking soda
1 Tablespoon hot water
1 Cup mashed banana
1/2 cup chopped nuts or chocolate chips
Directions:
Preheat oven to 350 degrees. Blend flour, salt, nutmeg and cinnamon together in a bowl. In a separate bowl, beat together butter and sugar. Add the egg to the creamed butter and sugar mixture. In a small bowl mix together the hot water and baking soda until the baking soda dissolves. Add the mashed banana to the baking soda and water and add to butter/sugar mixture. Fold in dry ingredients. Add nuts or chocolate chips. Put into greased muffin tins, filling each 3/4 full. Bake for 22-25 minutes. Makes about 1 dozen muffins.
**I add both nuts and chocolate chips to mine and it turns out fine. I also sprinkle a little brown sugar on top of each muffin before going in to the oven so it comes out with a nice crust on top.
