Ham and Cheese Frittata


4 eggs
1/4 Cup milk
1/4 teaspoon dried cilantro
salt and pepper to taste
1/2 cup shredded cheese (we used the Mexican blend but any kind would do)
1/4 pound diced ham
1/4 Cup diced onion
1 Tablespoon butter

Melt butter in a medium sized oven safe frying pan. Add onion and saute until onions are slightly translucent. In a medium bowl beat eggs, milk, cilantro salt and pepper together. Add diced ham and 1/4 cup shredded cheese to egg mixture. Pour into the medium oven safe frying pan with the onion. Cook on stove top for approximately 5 minutes on low heat. Do not move or mix eggs once in the pan. You will see that the edges of the frittata are mostly done. Sprinkle the remaining cheese on top. Bake in the oven for approximately 7 minutes. Depending on how your oven cooks you may need to broil for a few seconds at the end to get it golden brown on top. Make sure to remove the pan with a towel or pot holder, the handle is very hot! Slice into quarters and serve.

*This is just a basic recipe, you can obviously change things to your taste. I think that adding sauteed veggies or even salsa would be a nice variation.

You know I've never had frittata. I'm going to have to try it, because my husband eats eggs every morning. This would change it up a bit, but yet he could still get his eggs
